NUTRITION BOWL
WITH BEETROOT HUMMUS AND GUACAMOLE

This healthy recipe is one of my favourite go-to meals.  It’s a bowl full of nutrients and goodness to keep you energised and vibrant all day long.
(makes: 2 bowls)

Ingredients:

2 handfuls of spinach
½ cup brown rice, cooked
½ cucumber julienned
½ carrot julienned
Sweet cherry tomatoes, sliced
Nori seaweed sheets
Tempe or tofu, cubed & pan cooked with coconut oil
Sprouts of choice
½ lemon juiced
1 tablespoon coconut oil
Salt and cracked pepper to taste
Beetroot hummus
½ beetroot grated
½ cup of cooked chickpeas
1 small glove of garlic, pressed
1 tablespoon extra virgin olive oil
Pinch of salt and cracked pepper
Guacamole
1 ripe avocado
½ lemon, juiced
½ handful of fresh coriander
Pinch of salt and cracked pepper

Method:

1. To make the beetroot hummus, blend all ingredients until smooth. Do the same to make the guacamole. Set aside.
2. Cook brown rice as per packet instructions.
3. Fill bowl with cooked brown rice and spinach leaves.
4. Top with all toppings including a dollop of beetroot hummus and guacamole.
5. Drizzle with fresh lemon juice, salt and pepper if desired.
